Asian Chilli Chicken Recipe

Cook time: 10 – 15 minutes

Serves: 4


  • 800g chicken thighs, roughly chopped
  • 3 chillis, sliced
  • 6 spring onions, chopped
  • 3 garlic cloves, thinly sliced
  • 4 cm knob of ginger
  • ⅓ cup ketchup manis
  • Juice of 1 lemon
  • 2 tbsp Pukara olive oil
  • Pinch of Tasman Sea salt
  • ½ cherry tomatoes
  • 2 tbsp demerara sugar


  1. In a pan over medium heat add olive oil, garlic, ginger, tomatoes, chilli, spring onion and stir. Allow to cook for 10 minutes, stirring occasionally.
  2. Turn the heat up to high and add in the chicken, salt and stir. Let sit for a few minutes. Once chicken starts to caramelise, stir and add sugar, lemon juice, ketchup manis. Stir and let simmer until chicken is fully cooked.
  3. Turn pan off and add fresh spring onion.
