Asian Poached Nichols Chicken


This is an easy, flavourful way to poach chicken – perfect for pho, sushi, rice bowls, or even simply in a sandwich.   • 2 cups water
  • 1 Brown onion, roughly chopped
  • 1 Chilli, chopped
  • 3 Spring onions, roughly chopped
  • 2 Garlic cloves
  • 1 inch knob of Ginger, roughly chopped
  • ½ cup caster sugar
  • 1 cup chinese cooking wine
  • ⅓ cup soy sauce
  • Pinch of Tasman sea salt
  • 1 tsp cracked pepper
  • 3 Nichols Ethical Free Range chicken breast


  1. Into a pot of water add brown onion, chilli, spring onion, garlic, ginger, sugar, chinese cooking wine, soy sauce, salt and pepper. Bring to the boil and simmer for 5 minutes.
  2.  Add in chicken breasts and bring back up to the boil. Once it has reached boiling point, reduce to a simmer and cook for a further 15 minutes.
  3. Remove chicken and use two forks to pull apart the breast. Garnish with spring onions, chilli or authentic wasabi from Shima Wasabi.
